Melissa Rickman’s Divorce Soup
Ingredients
1 cup diced onion
4 cloves chopped garlic
1 sprig fresh oregano chopped
3 large basil leaves chiffonade
3 tbsp beef base
2 carton of beef stock
2 large zucchini quartered and sliced
4 carrots sliced
2 russet potatoes diced
2 stalks of celery
20 meatballs
1tbsp Granulated garlic
Fresh cracked pepper
Kosher salt
Cheese tortellini optional
Scratch Catering Services Presents: Strawberry Tiramisu
What you Need
1 1/4 cups Scratch-made strawberry preserves
1/3 cup plus 2 tablespoons Grand Marnier or other orange liqueur
1/3 cup fresh squeezed orange juice
1 pound mascarpone cheese*, room temperature
2 cups chilled whipping cream
1 cup powdered sugar
1 teaspoon vanilla extract
72 ladyfingers
2 pounds strawberries, divided
2 packages of freeze-dried strawberries pulsed in a food processor until the berries are dust.
What to Do
Whisk strawberry preserves, 1/3 cup Grand Mariner, and Orange Juice together until well incorporated.
Using electric mixer, beat together heavy whipping cream, powdered sugar, vanilla, and remaining 2 tablespoons Grand Marnier in another large bowl to soft peaks form, turn mixer off. Add mascarpone cheese to the mixing bowl; return bowl to mixer and beat the mixture on medium low, using the paddle attachment until the mixture comes together and is all one consistency.
Hull and slice half of the fresh strawberries.
Spread 1/2 of the preserve mixture over bottom of a 9x13x2 oblong pan serving dish. Arrange enough ladyfingers over strawberry mixture to cover bottom of dish about 1/2. Then spread 1/2 the mascarpone cheese/cream mixture over. Arrange the 2 pounds of sliced strawberries over mascarpone mixture, pressing the berries in the cheese mixture and pour the resining 1/2 of the preserve mixture over the fresh berries. Repeat this process by layering with remaining lady fingers, and mascarpone mixture, top with a dusting of the freeze dried strawberry dust. Cover with plastic wrap and chill at least 8 hours or overnight. Enjoy!
Serve additional fresh strawberries with tiramisu when serving if desired.
*Italian cream cheese available at supermarkets and at Italian markets.
